Akasaka Fukineki 赤坂ふきねき, Tameikesanno, Minato-ku
We met Koichi for lunch and went to Akasaka Fukineki. He introduced hitsumabushi. It looks like unadon (grilled eel over rice) but it’s different because it is eaten in 3 steps so that you can enjoy unagi in 3 different tastes.
The first step is to take some rice and unagi from the ohitsu (here it is in a bowl or donburi but ordinarily I think it is served in a wooden rice tub) and place it in your bowl and it is eaten like regular unadon. The second step is to take more rice and unagi from the ohitsu, place it in your bowl, and add some negi and nori and mix everything together. The third step is to place the last of the rice and unagi from the ohitsu in your bowl, and add some negi, nori, wasabi and broth and it is eaten like ochazuke. It was very delicious!
